From Japan, our Wasabi powder is guaranteed 100% ground wasabi, unlike most which are made mainly with a lot of added horseradish and mustard. Its flavour could be broadly described as the Japanese equivalent of both of those, perhaps closer to horseradish.
Wasabi is very hard to grow, and grows nowhere else except Japan. This means it is quite expensive, which is why it is so often blended. Despite this it is an essential ingredient for anyone who loves Japanese food.
Wasabi is used to bring an astringent heat to many dishes, especially the seasonings for sushi, and is also used as a general condiment in Japan. Its beautiful, light pistachio colour adds an extra element to dipping sauces. It has a very strong flavour which can be overpowering so it is important to utilise it with caution; when used correctly, however, the warm balance it brings to your food is delightful. It is especially good with beef, and a nice twist is to mix with a little soy sauce and rice vinegar as a marinade for steak.
