Nutmeg has its own distinct and unique flavour; earthy, nutty, warm and sweet, all at the same time. Whole nutmeg should be grated just before use (or even better direct into your dish) to ensure the freshest aroma and flavour. It can be used in both sweet and savoury dishes and it complements Bechamel & cheese sauces very well. It is used in many vegetable recipes where it has a particular affinity with cauliflower and spinach, especially when a creamy element is also added (cauliflower cheese, spinach Florentine).
