Annatto (also known as achiote) is very widely used in Latin American, Caribbean and Filipino cuisine, and this 100%, freshly ground powder is the easy and convenient way to use this colourful and versatile spice. It has a sweet, tart and peppery flavour, and imparts a beautiful orange/red colour to your cooking.
Annatto is excellent for using in any dish where a red colour and spicy flavour is needed, such as tandoori chicken. It should be used in moderation, as too much will overpower your dish – one teaspoon should be sufficient to obtain its beautiful colour and flavour. Try mixing some annatto powder with cumin, oregano, chilli, garlic and olive oil for a delicious marinade which will work wonderfully with fish or chicken before grilling, or omit the olive oil for a delicious dry rub. It will also add colour, flavour and depth to stews and casseroles, and it is especially good when used in rice dishes.
