Lemongrass is a staple ingredient throughout Southeast Asia, and in its powdered form is easy and convenient to use in a vast range of dishes. Its citrus tang features in such favourites as Tom Yam soup, Thai curries, Satay and Vietnamese salads, and it makes a refreshing difference to Western dishes also, even to something as basic as a roast chicken.
The aroma of lemongrass is almost as important as its flavour, especially in Thai food where it balances with the abrasive, salt notes of fish sauce or shrimp paste, and this is a main reason why it is such an important component of the finished dish.
Lemongrass powder has a more concentrated flavour than fresh, and a little goes a long way – one level teaspoon will give the equivalent flavour of a stalk of fresh lemongrass.
Use the powder in marinades and salad dressings to add a burst of citrus, and to bring an exotic twist to many everyday dishes.
