Sesame is one of the oldest seeds known to man and is commonly used in Chinese & Japanese cuisines. Black sesame seeds do not produce the same nutty flavour produced by white sesame seeds as they have a slightly more bitter flavour. The seeds can be toasted first either in a frying pan or baked in the oven until they become brown and fragrant. When a recipe calls for white or black sesame seeds it is often more over a matter of appearance than flavour. Sprinkle the seeds on breads, pastries, salads or rolled onto a piece of fish or meat before cooking for a crunchy coating.
