A spicy seasoning that brings out the flavours of Jamaica. The use of allspice gives this blend an aromatic flair while the chillies provide the heat. This is then nicely complimented by the sweetness of the cinnamon amongst others, producing a delightful combination of flavours.
Jerk seasoning can be used with any kind of meat and is widely used as a dry rub. For the adventurous cook try adding a dash of rum and honey to this blend and allow the flavours to seep through the meat over a few hours before cooking.
