A sweet and sour curry. A Kashmir curry is made with chicken, lamb or prawns cooked with onions and the spice mixture in coconut cream and/or yoghurt and dried fruits (raisins). Also delicious with pineapple pieces or lychees (available in cans in Indian/Chinese grocery stores). To complete the dish stir in a handful of blanched almonds and/or cashews towards the end of the cooking process.
