Literally meaning ‘four spices’, this classic French blend is predominantly used to flavour pates, sausages, charcuterie or terrines. Its strong peppery kick makes it particularly delicious in rich red wine sauces (try it in your coq au vin next time you make it), or in any slow cooked dishes. It is also a wonderful addition to strong tasting meat like game, and it can be used instead of black pepper in any dish. Key notes are black peppercorns, cloves, nutmeg and ginger, with the black peppercorns and cloves being the dominant flavours.
