Apart from its lovely colour, carrot powder is a great way to include the sweet, earthy flavour of carrots in your cooking. It can be used anywhere you would use fresh carrots, and it is particularly good added to juices and smoothies. It will beef up a carrot cake, and works really well to temper and balance spices, for example when added to the spice blend for a Japanese katsu curry.
