Cypriot Pyramid salt is produced by a unique process of evaporation which can take up to two years, and it is this process which results in the dazzling pyramid shape of the salt flakes. It has a subtle yet deep flavour, and a wonderful flaky texture. This combination blends the salt with chilli, which gives a very attractive appearance, red flecks of chilli mixing with the pure white colour of the salt. Like the lemon and rosemary versions it is perfect for roasting fish or chicken, but this one is also perfect for Asian cooking – for a genuine treat try using it on Chinese style salt and chilli prawns or spare ribs. It can be used as a table condiment, and looks great as a garnish.
