These small dried chillis are very commonly used in Thailand, where they bring their fiery heat to many dishes, and are a basic ingredient of the sweet chilli sauce which is served as a condiment. They can be simply dropped into a dish, or rehydrated in a little warm water before use. Also they are very good used to infuse oil – simply heat the chillis in the oil, which will take on the heat and colour and can then be used to cook with or to include in dressings and sauces. For such a small chilli, they really pack a punch!
