The famous Hungarian Paprika. No Hungarian goulash is complete without this bright red coloured spice. This delicately sweet and mild paprika can be added to many kinds of dishes from soups and stews to mayonnaise and stuffed cabbage. To get the most benefit from the flavour of this paprika, add the powder to hot oil but be very careful not to let it burn. Then add your meat, veg or liquid to quickly reduce the heat of the oil. Use this paprika to add colour and flavour to dishes.

Merken Spice (Chilean Blend)
Merken blend is from Chile and is based on a smoked chilli called cacho de cabra (also known as Basque chilli), mixed with salt, smoked paprika and coriander. It is traditionally an all purpose seasoning from the Mapuche people, but is used widely in Chilean food. Merken has a medium heat, with a lovely smoky, earthy and slightly salty flavour. It can be used as an all purpose seasoning in stews, and is also very good used as a dry rub before roasting or grilling meat, chicken and fish. It’s a great way to season lentils, potatoes and sauteed veggies, and it is very good when added to a fresh, zingy salsa. And for the cocktail hour, try using Merken to season peanuts, where its smokiness really works.
Kimchi Sesame Seeds
Combining the nutty crunch of sesame seeds and the pungent punch of Kimchi, this is a marriage made in heaven. Kimchi sesame seeds are used mainly as a garnish or seasoning rather than an ingredient, and are especially delicious when scattered over noodles. They are lovely scattered over any Korean or Japanese dish too, giving food a real umami kick along with a bit of chilli heat. A great way to liven up simple or even plain food, for example with steamed salmon or green vegetables such as pak choi or cabbage. And if you need to jazz up those instant noodles, Kimchi sesame seeds are the perfect answer!

Rose Harissa
This lovely new addition to our range gives Harissa, the fiery North African condiment, a delightful twist. We’ve added rose petals to the blend, and they give it both a delicious floral aroma and flavour which works so well. Rose petals are commonly added to fresh harissa in Morocco, and of course they are a popular ingredient generally in the area. Harissa is usually found in the form of a paste, however this dry spice blend is a healthier way of using it as it contains no oil. As a dry blend it can be used as a rub before roasting meat, fish or veggies, and it can also be used to perk up a tagine or the chickpea stew served with couscous. To make into a sauce, simply add a little water and a splash of olive oil and mix well. Harissa is quite a hot blend, but the sweeter flavours of caraway and mint mellow it down nicely. Adding tomatoes will also help reduce the heat.

Korean BBQ
Korean barbecue has long been a popular cooking style in Korea itself, and nowadays is also a favourite in the West; there are many restaurants and streetfood stalls specialising in this. This new blend makes it easy to enjoy this type of food at home. The blend is based on soy and sesame, along with a healthy boost of Gochugaru, the unique Korean red chilli which is so colourful and delicious. To prepare Korean BBQ, thinly slice beef, pork (belly pork works particularly well) or chicken. Mix 2-3tsp of Korean BBQ blend with a little oil or mirin, and combine with the meat (fish or veggies can also be used of course), then leave to marinate for a couple of hours. When you are ready to eat, heat your grill (or a ridged grill pan for the stove top), and cook the meat quickly alongside sliced onion and sweet peppers if desired. We’re really pleased with this blend, and it’s definitely one that will be used for barbies once the summer kicks off!
