Long a High Street curry house favourite, Dhansak is a rich, full-flavoured curry based on lentils. The UK version, tasty as it is, however bears little relation to the ‘real thing’, which is a speciality of India’s Parsi community usually enjoyed on a Sunday due to the long cooking time involved. Luckily our Dhansak curry blend works with both! A UK Dhansak is made with lentils and pineapple, so is rich, thick and with a distinct sweetness. The meat used can be either chicken or lamb. It is usually quite a hot curry too. The Indian original is much more complex, almost always made with mutton or goat, and vegetables including aubergine, potato and pumpkin. A main flavour will be methi (fenugreek) leaf, and the dish is very aromatic with cardamom, cloves, nutmeg and cinnamon all featuring. There is of course no pineapple involved!

Paneer Butter Masala
New to our range of curry blends is this wonderfully fragrant and warm Paneer Masala. Specially blended to suit the creamy Indian cheese, the Masala includes garam masala, Kashmiri chilli, fenugreek leaves, tomato powder and cardamom powder for a subtle yet still very flavoursome curry. It can be used in two ways; first, a dry curry which is basically a stir fry, and second as Paneer Butter Masala, a dish with a rich, luxuriously creamy gravy. Other vegetables can be added to either method, and a really good dish can be made by adding spinach to the dry version. A lovely addition to our range!
Lebanese Shawarma
Shawarma is one of the signature foods of Lebanon and the Middle East, and is very popular worldwide. The sight and aroma of the vertical spit loaded with chicken or lamb sizzling away is a common one wherever you may be, and our new Shawarma spice blend means you can recreate the flavour of this dish at home. The blend mixes garlic, ginger, cinnamon, cardamom, oregano and curry powder, and can be used as a marinade, a dry rub or just to season grilled food, giving it a wonderful flavour and aroma. Making a ‘proper’ shawarma is a bit tricky at home (few of us have a vertical spit handy!), but for a reasonable approximation thinly slice chicken or lamb fillet before marinading in Shawarma blend for an hour. Then cook the meat in a ridged grill pan with a spot of oil. Another good way is to dry rub chicken or lamb with the blend before roasting. Finally, Shawarma blend is fantastic for seasoning anything that is going on the barbie.

Turmeric Latte
There are few things more healthy and invigorating in the morning than a cup of Turmeric Latte, or Golden Milk. This new Spice Mountain blend makes it easy to make your own, combining turmeric with Ceylon cinnamon, ginger, vanilla powder, cardamom and black pepper. It’s not only the turmeric that’s healthy here, with the other spices all having their own health benefits too. To make your Turmeric Latte, simply stir 1/2tsp (use a small whisk if you have one) of the blend into your milk of choice – almond, coconut, soy and of course dairy all work beautifully as a great way to start the day! And likewise, the milk can be sweetened with your choice of sweetener; whether it be honey, coconut sugar or even date syrup, they’d all work well. You can also use the blend for smoothies, energy balls, and to make an energy-giving turmeric tonic; simply blend apple, carrot, lemon, mint leaves and Turmeric Latte spice for a real boost to the system.
Falafel blend
It is difficult to walk far in the Middle East without passing a falafel shop – falafel is the go-to fast food of the area, and also of course in many areas around the world where Middle Eastern people have settled. It is fast, delicious and filling with the garnish of sauces and salads, and a totally satisfying meal. Our falafel blend allows you to prepare this treat at home – featuring coriander, cardamom, ginger and garlic among others it will lend the true taste of the Levante to your falafel. Traditionally made with broad (fava) beans, nowadays falafel are usually made with chickpeas, and ‘instant’ falafel mix is widely available in Turkish and Asian shops (if using these, simply add a couple of teaspoons of falafel blend and proceed according to packet instructions). Great for lunch with salad and pitta bread, and also perfect for the party buffet. Falafel blend can also be used as an all-purpose seasoning for Middle Eastern dishes, especially a teaspoon added to a tahini sauce, for example.
