Amchur (mango powder)

Made from unripe green mangoes, this spice is widely used in Indian cuisine in dishes where acidity is required.  Amchur has a distinctive mix of sweet and sour flavours.  It combines well in stir-frys, lentils or pulses, vegetable curries or chutneys. Amchur has the same tenderising qualities as lemon or lime juice making it a particularly good addition to marinades.  Add to your dish towards the end of cooking to retain its sweet & sour flavour. Can also be used as a substitute for lemon juice.  Definitely worth trying!
