For those times when you just need a bit of sweet pepper flavour and you haven’t any fresh in the fridge, these dried mixed green and red pepper flakes are ideal. They are perfect for using as a base in many recipes but especially for fortifying and adding flavour to stocks, soups and stews. A favourite way to use these pepper pieces is to add to a pan of boiling rice, giving it that extra bit of colour. There is no need to rehydrate if you are cooking with liquid. However when rehydrated in a little hot water the peppers can be used to add to salads, cold sauces and dressings where their sweet flavour and colour will add greatly to the dish. They are also perfect for using in chutneys and pickles.
