Coconut Flakes, Toasted

Toasted coconut flakes are used extensively in baking and desserts, where their texture, colour and flavour come into their own. They can be used both as an ingredient and as a decoration, often as a coating or topping for cakes and cookies. They are not used so much in savoury dishes as dessicated coconut, but do turn up in rice dishes where they are again used as a decoration as well as for their flavour. They are delicious stirred into yoghurt or as a topping for ice cream, or added to muesli and granola, and in fact are amazing just eaten straight out of the bag!
