Oregano, Turkish

Widely used allover the eastern Mediterranean, oregano is an essential element in the cooking of Greece, Turkey and the Middle East. It is a mountain herb, full of gutsy, woody flavour, and is used mainly in its dried form (the drying process intensifies its flavour). Apart from being used in cookery it is used to garnish and season everything from Greek Salad to roast potatoes, from pizzas to kebabs. Particularly good matches are with anything involving tomatoes and lamb.
