These dried flowers, with their gorgeous blue colour, are perfect for when you want to make that special difference to your food. The use of flowers in cooking is not particularly common, and they are generally used as a garnish. But these work very well when added to salads, giving them a wonderful feel of Summer. They are also excellent for use in cocktails, particularly those based on vermouth, which is itself flavoured with other flowers. And they make all the difference to that Summer evening Pimms!
When using as a garnish, use them to work with the other colours in the food – they stand out particularly well with anything yellow or creamy, giving a delightful visual kick to the palate.
