Biryani is a luxuriant rice dish layered and cooked with meat, chicken, fish and/or vegetables. It is one of the stars of the Indian kitchen, and is very popular wherever curry is eaten. In India Biryani is served as a main meal, usually accompanied by one or two small vegetable curries and chutnies. However it is also excellent as an accompaniment, and makes a great centrepiece when served with other curries..
The easiest way to prepare Biryani is to cook your meat or preferred ingredient with a few spoons of this masala and some natural yoghurt. Then cook your basmati rice, again seasoned with a spoon of masala. Mix the rice and the meat together, and finish for 10 minutes in the oven, then serve, garnished with crispy onions, hard-boiled egg, sliced tomato and chopped coriander. A feast for the eyes and for the stomach!
Alternatively, for something a little different, mix the Biryani spice with a squeeze of lemon juice, olive oil and garlic to make a flavorful marinade for beef or lamb. Also the Biryani masala can be used to enliven and lift an everyday fried rice.
