These whole dried Indian chillies are a great ingredient to have handy in your kitchen. Their flavour is such that they can be used in most dishes, and another reason they are so versatile is that this flavour blends so well with any other spices used, not overpowering them. They are the most commonly used chillis in Indian curries, and also work very well in Thai food.
