Epazote is a herb from Central and South America with a flavour similar to oregano, but more pungent, and with a very distinctive aroma – in fact its name, taken from the Nahuatl language, translates as ‘stinky weed’! It is especially common in Mexican food, particularly in dishes with beans involved, and is important as part of a salsa verde (green salsa). It is used with beans due to the fact that it is thought to have anti-flatulent properties, but its distinctive flavour also matches very well with the earthy qualities of beans and pulses. Another common use for epazote is in herbal teas.
