Masala Chai is India's favourite brew (spiced tea) and is emerging as the next trend in the specialty 'teas' section in Western parts of the world. It is a wonderfully fragrant blend of exotic spices which is normally infused in lots of milk and sugar - the extra sweetness really brings out the full flavours of the spices. If possible, boil water, milk and half tsp of the spice mix for 5 mins then add sugar (to make 1 cup). The longer the brew the better the taste. Strain through a sieve before serving. Key notes are cardamom, cinnamon, cloves, ginger and pepper. Chai is a good comfort drink and an alternative to tea or coffee. A little goes a long way, using too much can be overpowering but it's very aromatic and reminiscent of India when the correct amount is used.
Ingredients: Pepper, Ginger, Cassia, Cloves, Nutmeg, Cardamom, Mace.
